Joan Green’s Sweet Potato and Carrot Soup

ImageJoan Green debuts the food category, “What midwives are eating.” We had our Bay Area Homebirth Collective meeting today at Joan’s house in Lagunitas. What a treat to get out of the city and enjoy Joan’s beautiful garden and home. Joan is one of the newest members of the BAHC, but she has been a midwife longer than any of us — almost 30 years. She says that she moved to California so that she could have a garden. You should see it, so beautiful!! Joan served us an amazingly flavorful sweet potato and carrot soup, as well as a light salad with her homemade vinaigrette. As an added treat, we shared a store-bought, gluten free chocolate cake for Sue Baelen’s birthday. Happy Birthday Sue! And Thanks Joan for the wonderful lunch!

Joan’s Sweet Potato and Carrot Soup

1 cup chopped yellow onion

2 small sweet potatoes, chopped

4-5 carrots, chopped

1 t. cumin

1 t. curry powder

2 T. extra virgin olive oil

1 can coconut milk

4T. cilantro, chopped

Saute the onion with the cumin and curry, 5-10 minutes. Add the sweet potatoes and carrots and 1 qt of water. Simmer until the veggies are soft. Blend all ingredients in a blender (careful, it’ll be hot!) with the coconut milk and cilantro. Pour back into your pot and keep warm on the stove. So yummy!

Joan’s Vinaigrette

2 teaspoons tamari

2 T. maple syrup

3 T. balsamic vinegar

1 clove garlic, minced

1/4 -1/2 cup extra virgin olive oil

Whisk all ingredients together, will keep at room temperature on the kitchen counter.

    The soup looks wonderful, simple but rich! My girls will eat almost anything if I put it in a soup, so I will definitely try this one. I’d also like try that vinaigrette. I’ve never made my own, but Lucia recently asked me to make her more salads please. Okay! I’m bookmarking these recipes. 🙂 Thanks Maria and Joan.
